SPAGHETTI ALLA CARBONARA ... Con gorgonzola e pancetta affumicata!


Bring a large pot of salted water to a boil. Cook the cavatelli 2 minutes less than the package directions. Meanwhile, add the pancetta and olive oil to a large skillet and warm over medium high heat. Cook, stirring often with a wooden spoon, until the pancetta is crispy, about 8 minutes. Add the shallots and cook another minute until fragrant. Add the tomatoes and season with the salt. Cook, stirring often for about 4 minutes or until the tomatoes are beginning to soften.

This is NOT a low fat recipe, but it is oh-so delicious when you are in the mood for a treat. I made it up when I had some pancetta, heavy cream and gorgonzola on hand three things I almost never have in the house. I hope you enjoy it as much as we do.
